I have always said, after San Francisco, the other city I would love to live is Seattle. I just love how diverse, open and friendly the people are, how beautiful the city landscape is (with the view to Mount Rainer), and how amazing the restaurants are here! When Thompson Seattle asked if I could join them to celebrate their newly opened restaurant, Conversation, I booked the flights straight away.

For proximity to Seattle’s greatest spots to visit, it doesn’t get much better than the 12-story Thompson Seattle, just a few blocks from the Puget Sound waterfront, which means easy easy walking distance from Pike Place Market, the Seattle Art Museum, Aquarium, the Olympic Sculpture Park, the Great Wheel, Ferry Terminals, Seattle Public Library and the Amazon Spheres. The hotel is just the perfect place to stay

There are plentiful and varied dining and night life options nearby, but two of the best and the most popular spots in the city are actually inside the Thompson Seattle: The roof bar The Nest and the newly renovated and menu-refreshed Conversation (previously Scout). The Nest is a 3,500-square-foot rooftop bar and lounge that offers stunning views, especially in the outdoor section(which also has warming fire pits) and solid cocktails. Prices are not extortionate at all. Conversation is the perfect place for family and friends gatherings. Nowadays, we are constantly distracted by our phones and digital devices that we are all guilty of spending less and less face-to-face quality time with the others. The idea behind Conversation is that they are creating an environment for you to put down your phone and device, enjoy the food, and have more real human conversations with one another. The Executive Chef Derek Simcik and Executive Pastry Chef Kate Sigel created such an amazing menus that you want to share dishes with the others, try different things, and talk about food. I remember at dinner, every time when a dish came out, people just stopped talking and stared at the dish instead. The plating for each dish was so impressive and beautiful and it grabbed people’s attention straight away. All the dishes that Chef Derek’s created is a reflection of food his family enjoyed together while abroad. There is European influence, Asian influence, American influence, and much more. Then as we were tasting the food, we started to guess the secret ingredients, try to figure out the origins and how they were cooked, and talk about all travel experiences we had in those places. So many more conversations sprung out ever time when a new dish was brought out onto the table. And for dessert, you must not miss the Chef Kate Sigel’s mind-blowingly creative pastries and desserts. I am talking about dessert under the clouds, garden style dessert under the dome, chocolate treasure chest… Confused? Well, you just have to try to see for yourself to see what they are. Side note: if you are a homeware lover as I am, you will really appreciate the plates and bowls that Chef Derek chose for the restaurant. They are all gorgeous!

As for our room, we stayed at a waterfront two queen-sized beds room with floor-to-ceiling windows, which unveils a stunning view to the Puget Sound. On the walls, a collection of artworks in various styles are beautifully displayed.. What really thoughtful and sweet of the hotel was that they set up little Tipi with books and drawing set for the kids. In the evening, we watched sun going down gloriously while cuddling together in our cozy beds, and then the kids enjoyed some cookies and milk in their little Tipi. The next morning, I woke up very early and saw that the sun was about to rise. Since The Nest wasn’t due to open until an hour later, I decided to order room service instead. The food actually came within 15 mins and we were able to enjoy some breakfast in bed with an epic sunrise.

As hard as it was to drag ourselves out of our cosy hotel room, we did manage to get out and explore some cool spots around the city. Two minutes walk, we arrived at the Pike Market Place to savor some fresh produces. You can find almost everything here, flowers, fruits, veggies, farm homemade products, seafood, and much more. After an 8 minutes walk, we visited Amazon Sphere, which is a creative tropical-rainforest-style workspace for Amazon employees. Also Seattle Public Library is about 10 minutes walk distance. If you are here in Seattle to visit many popular spots that the cities offers, Thompson Seattle is really one of the best choices for you to stay.
